    Combine goat cheese, diced red pepper, pecans, and minced garlic in a bowl. Add a pinch of salt and pepper—just enough to bring out the flavors. Please give it a good mix until it’s smooth and creamy.  

  3. Flatten the Chicken 

    Lay your chicken cutlets between two sheets of plastic wrap. Gently pound them with a kitchen mallet until they’re about 1/4 inch thick—think even and easy to roll.

    Take two slices of pancetta and place them side by side. Lay a chicken cutlet on top, spread a generous amount of the goat cheese mixture in the center, and roll it up snugly. Make sure the pancetta wraps the chicken completely. Repeat for all cutlets.  

  5. Season and Place

    Position the chicken rolls on the prepared baking sheet with the seam side facing downward.

  6. Bake to Perfection
